Healthy pasta recipe - vegetarian
Vegetable Pesto Pasta
Ingredients:
- 8 ounces of whole wheat pasta
- 1 tablespoon of olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 cups of diced vegetables (such as bell peppers, zucchini, squash, and mushrooms)
- 1/4 teaspoon of salt
- 1/4 teaspoon of pepper
- 1/4 cup of vegan pesto
Instructions:
1. Bring a pot of water to a boil and cook pasta according to package instructions.
2. While the pasta is cooking, heat the oil in a large skillet over medium heat. Add the onion and sauté until tender and fragrant, about 3 minutes.
3. Add the garlic and diced vegetables. Cook until vegetables are crisp-tender, stirring occasionally, about 5 minutes.
4. Add the cooked pasta to the pan and season with salt, pepper, and pesto. Stir everything together and cook for 2-3 minutes, until pasta is heated through.
5. Serve immediately and enjoy!
